We are recruiting multiple Commis Chefs to join the expanding culinary team at Patina at Customs House, a contemporary restaurant known for its paddock‑to‑plate philosophy, shared dining experience, and stunning Brisbane River views.

About This Opportunity
This is an excellent opportunity for an enthusiastic Commis Chef to join our culinary team at Patina at Customs House. Assisting the Executive and Sous Chef in maintaining the high culinary standards.
Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. the restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.
Staff are required to fulfil 38 hours per week across a seven day roster including weekends and evenings.
Key responsibilities include but not limited to:
Producing high‑quality à la carte and function food for Patina at Customs House, including in‑house events and external catering
Maintaining consistently high standards of food quality, presentation, and service delivery
Supporting the training and supervision of kitchen hands as required
Using kitchen equipment safely, responsibly, and in accordance with workplace procedures
Monitoring and recording fridge, cold‑room, and incoming stock temperatures as required
Communicating stock requirements and issues to the chef in charge
Adhering to all food safety, hygiene, and Food Safety Plan requirements
About You
You are an enthusiastic and reliable culinary professional who takes pride in your work and enjoys contributing to a team environment. You bring solid foundational skills, attention to detail, and a genuine interest in contemporary food.
You will have:
Completion of an apprenticeship in cookery
Minimum two years’ experience as a Commis Chef in a similar establishment
Sound knowledge of à la carte and banquet food production
Good understanding of kitchen operations, food safety, and WHS requirements
Well‑developed organisational, communication, and interpersonal skills
A positive, professional attitude and commitment to high standards
